How to Make Coconut Rice in the Saladmaster MP5

Cookware:
Ingredients:
4 Cups of Long Grain Rice
2 Cans (13.5 oz) of Coconut Milk
Mixed Vegetables (frozen or fresh)
Shrimp
2 Red Bell Peppers
Garlic
Onion
1 Habanero Pepper
1 Teaspoon of Salt
1 Teaspoon of Curry
1 Teaspoon of Thyme
1 Cube of Chicken Bouillon
Chicken Broth (optional)
Directions:
Soak and wash 4 cups of long grain rice with hot water.
Blend 2 red bell peppers, garlic, onion, and 1 habanero pepper.
Pour the blend into a cold (not preheated) MP5. Add salt, thyme, curry, and 1 cube of bouillon.
Add the shrimp, coconut milk and rice to the MP5 and set the temperature at 300°F for 35 minutes.
Ten minutes before the time expires, add the mixed vegetables to the MP5.
Once the time is up, mix the coconut rice together and serve!
Tip: If you want your coconut rice to be more moist and/or soft, you can add 1 cup of chicken broth.
